Crock of chicken

I have seen on Pinterest many times about putting an entire chicken in the crockpot. I tried it today. It was super easy and no worries about when dinner would be done. Here is a before pic, I covered with rosemary, fresh garlic, and minced onions, I threw a little Jane's crazy salt mix on it too. Here is am after pic. Almost forgot to take it. The Mr started to cut it up and I said wait I need a pic. I also wanted a nice healthy side that I could use as a veggie and carb so I made spaghetti squash. I baked it in the I've for about 50 mins then I scooped it all out and put it in a huge frying pan with some extra virgin olive oil and fresh garlic. Cooked it up a bit and served it with some parmesan cheese sprinkled on it. I forgot a picture of that. We also had stove top because the Mr and baby S love it...now to be honest, I haven't really tracked, measured or cared about what I ate today. Also I am lucky I even got 48oz of water to drink. I didn't exercise either. I also binged on a bunch of hummus with raw veggies. I'm saying what happened because I want to stay accountable for my weight loss journey. I had a bad day, so what, I know I did, I see I did, now I just pick up and move forward. I'm NOT going to let this little slip up turn into a huge set back. I need to remember that if I focus on results it will stress me out because they won't come fast enough, I MUST remember that this is a lifestyle change and CHANGE is the key, to see the results.

Tomorrows plan-
Get up and do a Jillian Michaels workout DVD.
Breakfast-wheat toast with PB and banana, coffee
Lunch-chicken and squash from tonight's dinner and any other leftovers I find in the fridge. I know there is Lima beans <-- yum! And also tabouli salad.
Dinner-girls night out but I do know fish is on the menu.
Also I will be doing my weekly cleaning tomorrow while Mr and baby S are out for most of the day at cabelas for a boys day out.

Working my way back!

Now that I'm at day 3 I have some mixed emotions. I want to wake up skinny, I want to work at it, I want to eat whatever and not give a crap about how it will go straight to my ass. I tell myself I have to work at this and thanks to Beth's journey you can check out her blog here post I am now telling myself this
Today's menu was this Breakfast- Waffles with Peanut butter and a banana and coffee with creamer Lunch-leftover dinner from last night I just added an applesauce. PM Snack- Baby Sugar Plums, kashi Crackers, and Fat Free Yogurt Dinner- Chicken Sausage, stuffed eggplant, and white rice.
The eggplant was super easy I sliced it in half. Cut out the inside and chopped into cubes and mixed it with tomatoes, peppers, and onion. and then topped with RF Mozzarella cheese. I should have taken pics of the entire process but I didn't... THere's next time right. Here is a picture what I used to stuff the eggplant.
After dinner I met up with one of my bestie's at a local park for a walk/jog/run. All I can say is WOW!! I'm so outta shape and I wish I would have stuck with my running in 2010. I thought man running Sucks! and I hated being sweaty. I again had to tell myself I have to work at this. I'm not going to wake up one morning and be a distance runner. S had a great time in the BoB. Here is 2 pictures Deb snapped of my coming down the hill. I look fabulous don't I? Bahaha!!!

Day 2 of Renewed Me

Well today is day 2. I did pretty well last night. I did snack on a few animal crackers before bed. So today's menu is: Breakfast-
Kashi Cereal, RF Milk, and the banana I had as a mid morning snack. Oh I can't forget the coffee... Lunch
Quinoa and squash left from dinner and I added some greenbeans too. I did have a diet coke after lunch, I needed a pick me up.


Mid afternoon snack

Baby sugar plums & 1% cottage cheese and turkey pepperoni. Don't worry I didn't eat it all together. I had it spread out through out the afternoon.

Dinner
We have an oven roaster, fresh string beans, & a rice mix by near east.


After dinner I took S to the local library we parked at my parents' house & walked through the park to get to the library. We stopped and watched some kids play basketball & baseball. We were gone about an hour. I know that this is mostly rambling but I need to keep writing to hold myself accountable for what I eat each day. As time goes on I will not ramble and make sense :)

The Renewed Me

Hey There Blog World! I haven't blogged in 2 yrs! So many things have happened. I went off of my WLJ to start a new journey called Motherhood! My wonderful son is now 14 months almost 15 months and I have played with the idea to jump back on the WLJ for a year and just couldn't stay on track! I have decided I'm going to start blogging again to help me stay accountable since I'm going to start this out on my own and not on WW like I did last time. I have a very busy life so I will come on and update at least once a week. So here's to the renewed me and the next chapter of my life. Today's Menu Breakfast- 3 eggwhites and 1 whole egg with Reduced Fat Mozzarella cheese, peppers onions, & mushrooms. AM Snack- Large banana Lunch-Large Salad, with turkey pepperoni, RF Mozzarella, crasins, croutons, and Honey Mustard on the side. PM & evening Snacks (if needed) -1% cottage cheese with blueberries. Sugar plums, and turkey pepperoni Dinner- Pork Chops, quinoa, summer squash Lots of water with limes and lemons. Goal for the week is to 1. drink 64oz of water during the work day and 2. to take my son on a walk every night after dinner through the neighborhood.

It's called a what?!

Today I went to the local Farmer’s Market and got some fresh fruit and veggies. A few things I scored were:
~Cherries
~Strawberries
~Blueberries
~Corn on the Cob
~Spinach
~Peaches
~String Beans
~Zucchini
~Bananas

Once I got home I washed up the produce so it’s ready to go for the week. This will save me time later during the week when I’m busier.

Last week I bought a blender and I have been dying to try a “Green Monster”

2 cups Spinach


1 cup berries


1/8 cup Sprouts, They looked healthy so I picked them up today. Never once in my life have tried them before today.


½ c of Vanilla Yogurt
½ of Cherries, I forgot pic of them  Oh well next time.

Everything in the Blender ready to go…

And the Finished Product! I would give it a 3-4 Star rating. I’m not to sure about these. I did add a Splenda packet to try and sweeten it up. I think I will continue to experiment with different combos of things to make Monsters.

Week 34 Finding my skinny!!

I was sitting here thinking how long have I've been on my weight loss journey (WLJ). It's been 34 weeks. Boy, this sure can be a struggle. I have lost 41.3 lbs and I still see that "fat" girl in the mirror. I have to learn how to find the "skinny" girl in the mirror. So to help me find that I'm going to take my measurements tonight and post them this weekend. I will continue to take measurements on a monthly basis. I think if I take them any more than that I will get discouraged. I'm also going to post some side by side pictures to help me see the changes going on with my body.

What have I done today to help with finding the skinny girl:

Well here is what I ate:
I had Shredded Wheat for breakfast with milk, an apple for a morning snack, then for lunch I had a Veggie burger with some cheese and Canadian bacon on a potato roll. I was trying to go for a bacon cheese burger but that just didn't work out the way I wanted. I have to invest in some turkey bacon next time I want a "bacon cheese burger". I also had some cucumber salad that I made last night. It was super easy: 2 cucumbers, sliced and peeled. some shredded carrots, balsamic vinegar and some Mrs. Dash and I also had a 100 calorie pack of almonds and then a kiwi for late afternoon snack.

Before dinner I'm going for a run with on of my besties! Ok so my run wasn't really a run it was a walk/jog

On my way home for some Crab!


For dinner we are having some crab legs, rice, and grilled eggplant. I'm quite excited for dinner tonight because I haven't had crab legs in the longest time. The Husband grilled the legs and OMG they were so yummy! I didn't even need butter. I have never tried to eat crab without butter. The rice was some type of Pilaf I got at the grocery store and it was spicy. I'm not sure what is up with that brand but each time we get something of that brand it's spicy. I'm not a big spicy person.
